The last of the baking
December 18, 2024. The other best thing to eat this side of heaven is Sandies. They have other names. They could be called snowballs because they are round and covered with powdered sugar. If they are not round I have heard them called coccoons. They are butter and sugar and vanilla and crushed pecans, chilled and rolled up, baked and dipped in powdered sugar. They are incredibly delicious.
I still have enough pecans to make another batch of Sandies, and I still have half of the Welsh Cake batter in the refrigerator. And if I do anymore baking this year it will be to make the rest of the Welsh Cakes and another batch of Sandies. I could conceivably do that, but the truth is I much prefer eating these scrumptious confections than making them.
I did cover my new cookie sheets with aluminum foil, which makes clean-up a whole lot easier and that way I won't have to throw them away for a long time, considering how infrequently I make cookies.
I think I paid my electric bill twice. I forgot to pay it in November so I got the bill for both and already paid it, but I forgot and paid the November amount again, which was $1.10 less than the December amount which I already paid, so that should mean I am already like $50 ahead for January, which is cool. If they are good with their accounting I should get credited on the next month's invoice.
That's what I get for being a space cadet, I guess. I also wish everything wasn't online and digital and all of that. They always want you to go online to look at your account. Forget calling anyone on the phone anymore. Instead you just talk to robots all the time. I hate that. I really do.
Oh, well, I just want to check in and say I hope you're having a good Christmas season, and it's not all about being sad because people have passed on and this and that. That perhaps should not be the focus.
I love this season, because people are thinking about other people a lot. Kids, of course, are thinking about Santa Claus and what they're going to get for Christmas. We hope that adults are not overwhelmed with buying things for everybody, but, of course, they probably are. I hope a whole lot of people will find Christ this year.
